Unless you’re new to Bobby Boyd Living, you know that I’m all about that comfort food, hunni. But when the love handles start to pop their heads out the window, I have to get back to my keto guido diet. And you know I still need the comfort… We all do!
So I recently stumbled upon this stuff on Amazon called Carbquik Baking Biscuit Mix. It only has around 2g net carbs per serving. The good thing is, it’s not just for biscuits… you can easily substitute the baking mix for a lot of things that you would need dough for… Including a perfect crusted pizza.
Today, we’re making an easy keto pizza. Loaded up with all the toppings. Indeed, it is a perfect way to end off a Friday night without worrying about those extra carbs. And it tastes phenomenal!
First, preheat the oven to 450°F.
Into a large bowl, add the Carbquik baking mix and water. Mix with a spoon and then knead it into a dough with wet hands.
Place your dough on a parchment-lined baking sheet and shape it into a circle.
Measure in the tomato paste, crushed red pepper, and garlic powder into a medium bowl. Mix with a spoon.
Spread the pizza sauce on the dough as you desire.
Sprinkle mozzarella cheese and Italian cheese blend as the base.
Arrange as much pepperoni as you want right at the center, sprinkle some fresh garlic, and continue with the green and yellow bell peppers, mushrooms, and sliced red onions.
Place the pizza in the oven to bake for 12 minutes.
Once it’s ready, sprinkle some more cheese on it and serve with your favorite dipping sauce.
