Stuffed Marinara Italian Sausages! (KETO & EASY)

These Stuffed Marinara Italian Sausages deliver a gush of warm, melted cheese and fruity delicious marinara sauce in every bite. If you love sausages, cheese, and marinara, this recipe is your fix!

Remember eating string cheese as a kid? Or maybe you’re like me and still eat them regularly as an adult.

Sure, you can sit there and enjoy it one strand at a time for nostalgia’s sake… BUT, what if I told you that you can create a super delicious and sensational dish out of them? No not mozzarella sticks… I’m talking about cheese-stuffed Italian sausage with marinara sauce.

This dish by itself is extremely simple. Cooked Italian sausages. String cheese. Marinara sauce.  Inexpensive pantry herbs and spices.

Because this is Bobby Boyd Living, we’re gonna make our sauce from scratch. If you’re feeling basic, there’s no shame in the jar sauce game. I actually made two versions of this recipe to appease both crowds (See vlog).

You can save some of the marinara sauce to eat with bread, pour over pasta or use it in other delicious recipes.

Even if you are a Keto-er, you can enjoy these stuffed marinara Italian sausages – All the ingredients are keto-friendly.

INGREDIENTS

For the Homemade Marinara Sauce:

  • 2 8 oz cans of San Marzano Tomatoes
  • 1/4 cup of Olive oil
  • 1 small Onion
  • 6 Garlic cloves
  • 2 teaspoons of Parsley
  • 2 teaspoons of Basil
  • 1 tablespoon of Garlic salt
  • 1/2 cup of White wine
  • 2 teaspoons of Crushed red pepper
  • Salt to taste

For the Stuffed Sausages:

  • 8 Italian sausage of choice
  • 8 String cheese
  • 2 tablespoons of Italian seasoning

INSTRUCTIONS

  1. Preheat your oven to 400 F.

FOR THE HOMEMADE MARINARA SAUCE

  1. Strain both cans of San Marzano tomatoes into a large mixing bowl. Use your hands to press the juice out of the tomatoes and leave it to strain completely. Fill the cans a quarter of the way with clean water. Set aside.
  2. Peel the garlic cloves and chop finely. Do the same with the onion. Open your wine bottle. Set aside.
  3. Heat the olive oil in a pot on medium-high heat. Add the onion and garlic, sauté until onions are tender and translucent.
  4. Add the white wine, tomato sauce (the thick sauce left in the strainer), water you poured into the tomato cans, season with salt to taste and stir.
  5. Add the seasonings – Parsley, basil, garlic salt, and crushed red pepper. Stir until it starts to boil. Lower the heat and allow it to simmer for 25 – 30 minutes.

TO MAKE THE STUFFED SAUSAGES

  1. Use your knife to slice down the middle of the sausages – To create a pocket for the string cheese.
  2. Fit the string cheese into the sausage pockets and arrange all 8 stuffed sausages into a baking dish. Sprinkle a pinch of salt over it.

BACK TO THE MARINARA SAUCE

  1. Let the sauce down from the heat. Pour a generous amount of the sauce over the stuffed sausages. And use a small spoon to evenly distribute the marinara sauce and fully cover the stuffed Italian sausages.
  2. Sprinkle the Italian seasoning over the stuffed marinara Italian sausages. Place the baking dish into the oven to bake for 35 minutes. Once it is ready, serve and enjoy immediately.

Notes

  1. When slicing the sausage, try not to cut all the way through so that the string cheese won’t slip off. You want to make sure it is secured tightly in the middle of the sausage.
  2. Substitute the homemade marinara sauce with a store-bought one (I recommend Rao’s marinara sauce) if you don’t have much time on your hands.
