  • Parchment-lined cookie sheet

INGREDIENTS

  • 1 bag Mother’s circus animal cookies
  • 6 oz cream cheese
  • Chocolate chips
  • Orange sprinkles
  • Betty Crocker’s Goblin pearls cupcake gems
  • Halloween sprinkles

INSTRUCTIONS

  1. Pour the circus animal cookies into your food processor, blend into fine crumbs, and transfer into a medium bowl.
  2. Add in the cream cheese to the cookie crumbs bowl and combine both ingredients with a spoon or wet hands.
  3. Scoop a little of the cookies + cream cheese dough with your hands, roll it into a little ball, and place on a parchment-lined cookie sheet. Repeat until the cookie mixture is all used up.
  4. Place the cookie sheet in the refrigerator to cool and firm up for 30 minutes.
  5. Before taking the cookie balls out of the refrigerator, melt the chocolate chips using the double boiler method.
  6. Carefully dip one truffle at a time into the melted chocolate and roll it around with 2 forks until it is completely covered. Use a fork to gently lift it from the melted chocolate and the other fork to cut off the excess.
  7. Place the coated truffles back on the parchment-lined cookie sheet and sprinkle some orange sprinkles, cupcake gems, and Halloween sprinkles before the coating hardens.
  8. Place the cookie sheet in the refrigerator to chill and firm up for another 30 minutes. Enjoy immediately.
